Olive Oil Avocado Chocolate Mousse

Who doesn’t like chocolate mousse? What if you could make a mousse that is actually good for you? Like “eat-it- for-breakfast-lunch-or-dinner-with-a-spoon” good? My sinfully delicious mousse recipe fits that bill! Indulge in my vegan, heart-healthy mousse that contains nothing but plant-based goodness. My recipe is easy to make with pantry ingredients and just takes minutes. With avocados having just 1/3 of the calories of butter and ZERO cholesterol, you can feel good about every bite!


Olive Oil Avocado Chocolate Mousse

Ingredients

Soak
3/4 cup plant-based milk, hot
1/2 cup maple syrup
3/4 cups dates, rough chopped
3/4 cups dark chocolate chips or pieces
Blend
1/2 cup olive oil
2 large ripe avocados, about 1cup packed
1 tablespoon vanilla
Add
2 tablespoons cocoa powder
1/2 teaspoon salt

Makes 3 and 1/2 cups Mousse

Instructions

1.   Place milk and maple syrup into a large microwave safe bowl and heat to nearly a boil. Prepare dates by removing pits and roughly chopping them. Add dates into hot milk/syrup mixture to soak for 5 minutes.
2.   Add in chocolate chips to the hot soaking dates. Let sit for 10 more minutes so the chocolate melts.
3.   Place olive oil, avocados and vanilla into a food processor or blender. Blend on medium until smooth and creamy, about 60 to 90 seconds. Scoop the avocado batter into the large bowl of melted chocolate. Stir to combine.
4.   Lastly, add cocoa powder and salt, stir into a smooth, glossy, thick mousse.
5. Chill in refrigerator for 2 hours before serving. Store in the refrigerator for up to 3 days or up to 2 months in the freezer in an airtight container.
