This creamy chocolate frosting is easy to make in 10 minutes. Watch the magic when the avocado batter turns into chocolate-mocha ganache in front of your eyes as you add cocoa powder and melted chocolate. Your taste buds will be drenched in creamy, silky chocolate bliss. Feel free to curl up on the couch and ignore the world around you with just a spoon and a bowl of healthy, fudgy frosting. Or you can be old fashioned and decorate your favorite cupcake, cake, or brownie with this perfect frosting.


Avocado Chocolate Frosting

Ingredients

1/2 cup strong, extra hot coffee
1/2 cup dried dates, rough chopped
3 large ripe avocados (about 1 1/2 cups packed)
1 tablespoon vanilla
pinch of salt
1/4 cup dark cocoa powder
1/2 cup maple syrup
1/2 cup plant-based milk (rice, almond or soy)
1 cup semisweet chocolate chips

Instructions

1.  Make extra strong, extra hot coffee in a large mug or small bowl, add dates into coffee and soak for 15 minutes.
2.  Place avocados, soaked dates, coffee liquid, maple syrup, vanilla, and a pinch of salt into a food processor or blender. Blend until smooth and creamy, about 1 minute. Scoop avocado batter into a bowl and add cocoa powder, stir into a smooth paste.
3.  Heat milk until steaming, pour chocolate chips into the hot milk to melt. Do not stir for a few minutes while chocolate melts.
4.  Stir the chocolate and milk until it becomes glossy and thickened, then add into the avocado batter to blend into a thick creamy mousse or frosting.
