Vegan, dairy-free, refined sugar-free, high fiber
Especially in the summer I need high energy treats for my weekend cycling with friends. I crave clean ingredients that are fun to eat. As a vegetarian, I always search for foods that add healthy protein as well as lots of fiber and vitamins to my diet. So, it will come as no surprise that three of my favorite ingredients are fruit, nut butters and chocolate. In this recipe I combine all three in the perfect summer energy snack that is easy to grab and go. These healthy bites are super cute and yummy too. Kids love to help make them and to eat them!


Banana Peanut Butter Bites

Ingredients

2 medium ripe bananas
1/4 cup peanut butter
1/4 cup dried unsweetened coconut
1/2 cup dark chocolate chips or chunks
1 and 1/2 teaspoons coconut oil

Instructions

1.  Cut firm but ripe bananas into ½ inch (1,5 cm) slices. Place on a dish and freeze for 20 minutes.
2.  Remove frozen banana slices from freezer and spoon ½ tablespoon creamy peanut butter (or any nut butter you like) onto half the slices of bananas. Press nut butter down to stick to half the bananas. Top each half with another frozen half banana to make a sandwich with the peanut butter in between. Place back in freezer for another 10 minutes.
3.  Chocolate: Combine chocolate and coconut oil in a microwave safe bowl and microwave for 90 seconds. Remove and stir to combine into a glossy, smooth chocolate coating.
4.  Remove banana bites from freezer and stick a long toothpick into each one to hold it while you dip into chocolate. Hold one bite with the toothpick and dip one side, coating with melted chocolate. Quickly roll the wet chocolate into coconut to let stick.
5. Stick bites in another whole, firm banana while you dip each one in chocolate for all 10 bites. Return bites to the refrigerator to harden completely
