Easy Paleo Brownies (aka Walnut Teff Brownies)

We all need an easy, healthy brownie recipe to bake quickly when friends are coming for a visit. These moist chocolate brownies melt in your mouth and satisfy your chocolate cravings. I use gluten free teff flour which has a warm, nutty, cocoa flavor, so it's a natural choice for brownies. (Teff flour is a ground seed, rather than a grain). My recipe comes together quickly and results in a deliciously, moist, fudgy, chocolate brownie. No dairy, no refined sugar, these brownies are a great choice for a healthy treat.


Walnut Teff Brownies

Ingredients

10 tablespoons (1 and 1/4 sticks) vegan butter
6 ounces bittersweet chocolate chips
1 cup coconut sugar
3/4 cup teff flour
1 tablespoon vanilla
1/4 teaspoon salt
3 eggs
raw walnuts (optional)
large crystal salt

Instructions

1.  Prepare a 12 square brownie tins with olive oil. Preheat oven to 350ºF/180ºC.
2.  Melt vegan butter and dark chocolate in a heatproof bowl in the microwave for 1 to 2 minutes or in a bowl set directly over simmering water. Stir into a smooth, melted chocolate syrup. Remove from heat and let cool.
3.  Once cooled, stir in coconut sugar, teff flour, vanilla, salt and eggs. Beat the batter using a mixer on high speed for 2 minutes. The batter will become thick. Fold in walnuts.
4.  Scoop batter into prepared tins. Fill each about two thirds full until you run out of batter. Top each brownie with one raw walnut half, plus a big pinch of large crystal salt.
5.  Bake 12 to 14 minutes. Do not overbake, these brownies will firm as they cool.
