Caramel never fails to add the perfect sweetness to my day. This vegan caramel – only sweetened with dates - is extra special. I added a can of coconut milk to make the caramel extra creamy. Vanilla, as the flavor enhancer, is rounded out with nutbutter to provide a good dose of protein and healthy fat for a lower glycemic load. This satisfying caramel is nothing less than pure plant-based goodness.


Vegan Coconut Date Caramel

Ingredients

1 and 1/2 cups dates
1/2 can (6.75oz. / 200ml) unsweetened coconut milk
1/3 cup almond butter
2 tablespoons coconut oil
1 tablespoon vanilla
1/2 teaspoon salt

Makes 2 and 1/2 cups of caramel

Instructions

1.  Add caramel ingredients into a blender or food processor: chopped dates, coconut milk, coconut oil, almond butter, vanilla and salt. Blend on medium speed for 1 to 2 minutes until creamy.
2. Top off your favorite cookies or eat with a spoon. Be sure to sprinkle on some large crystal salt flakes which gives any caramel a great flavor boost.
3. Store in an airtight container up to 1 week in the refrigerator or 2 months in the freezer.
