Vegan Chocolate Energy Cookies

Gluten free, vegan, Paleo, heart-healthy, high protein
I wanted to create a delicious high protein treat that tastes as yummy as any decadent cookie…meet my VEGAN ENERGY COOKIES! Soft and chewy chocolate protein cookies packed with plant-based, good-for-you ingredients that taste delicious…nut butter, maple syrup plus your favorite vanilla or chocolate protein powder. My chocolate chunk energy cookies are easy to make and just as high protein as any power bar that deserves its name.  


Vegan Chocolate Energy Cookies

Ingredients

2 tablespoon ground flax + 6 tablespoons warm water
1/4 cup melted coconut oil
1/4 cup nut butter
1/4 cup maple syrup
1 tablespoon vanilla extract
Dry
1 cup almond flour
1/4 cup vanilla or chocolate protein powder
1/4 cup 100% cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chocolate chips
large crystal salt

Instructions

1. Preheat oven to 350ºF/180ºC. Prepare a cookie sheet lined with parchment paper or sprayed with coconut oil.
2. Combine ground flax and water. Let sit 10 minutes. In a large bowl blend together melted coconut oil, nut butter, maple syrup and vanilla, using a hand mixer or whisk, for 2 minutes until creamy smooth.
3. Add into wet ingredients: wet flax seed, almond flour, protein powder, cacao powder, baking soda and salt.  Fold together until blended. Mix in chocolate chips.
4. Scoop dough into 14 cookie dough balls. Place onto prepared baking sheet spaced ½-inch (1,5 cm) apart and sprinkle tops with large crystal salt. Bake 12 minutes. Let cool completely before handling.
