Vegan, low glycemic, gluten-free, dairy-free, sugar-free, heart-healthy

 
PB & J – Peanut Butter and Jelly – are two magic ingredients of many childhood memories. Together, they provide a good balance of protein, fat and carbohydrates. This recipe is so easy to make, no baking required. A great snack for a portable treat that gives me energy without spiking my blood sugars. In addition, I use no-sugar added jam for these bites, so I get a healthy boost that I can feel good about.


PB & J Energy Bites

Ingredients

1 cup pitted chopped dates (about15)
1 cup oats
1/4 cup ground flax seeds
1/4 cup shredded coconut
1/2 cup peanut butter
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon salt
your favorite jam

Makes 15 energy bites

Instructions

  1. Line a baking pan with parchment paper. Place your favorite jar of jam in the freezer for 2 hours.

  2. Blend dates, oats, flax seeds, coconut, peanut butter, vanilla, cinnamon and salt in a food processor until combined. The mixture should be sticky when you press it between your fingers.

  3. Using your fingers, pinch off 1 and ½ tablespoons of dough and roll into a ball, 15 total.  Freeze balls for 30 minutes to firm up.

  4. Remove jam and balls from the freezer. Using your finger, make a thumb sized hole in the center of each ball. Put ½ teaspoon of firm jam into the hole. Fold up the edges, sealing the jam in the center, (like folding a dumpling) then roll between your hands to form a round ball. Do this with all 15. Place back in the freezer for 30 minutes.

  5. Can be stored in freezer for 2 months or refrigerator for one week.
