No Bake Energy Bites with Ginger

I love anything made with honey, oats, seeds and GINGER! When you need powerful fuel for action-packed energy in one bite, these balls are perfect. My cute little energy bites fit easily into lunch boxes or snack packs for hikers and cyclists. I made my naturally sweet bites using dates, high quality honey and vanilla. Then I crammed them full of whole grain oats, seeds and dried fruit. You can make these bites easily in one bowl in just minutes.

No Bake Energy Bites with Ginger

Ingredients

2/3 cups honey
1/2 cup dates, fine chopped
3 tablespoons almond butter
1 tablespoon vanilla
2 and 1/2 cups whole grain oats
1/2 cup pistachios, halved
1/2 cup dried cranberries
1/4 cup candied ginger
2 tablespoons chia seeds
1/4 teaspoon salt

Instructions

1. Heat honey, dates, almond butter and vanilla in the microwave or in a pan over low heat until very warm.
2. In a large bowl combine oats, pistachios, cranberries (cut in half), candied ginger (cut into small chunks), chia seeds and salt. Stir together to combine. Pour warm honey syrup over oat mixture and stir well to coat all ingredients.
3. Let batter sit in refrigerator until chilled for 30 minutes. Then roll mixture into 2-tablespoon-sized balls with your hands, pressing firmly to shape. It may help to use a little water on your hands to roll the bites. Repeat with remaining mixture.
4. Store in freezer for up to 2 months or refrigerate for up to one week.
