Vegan, refined sugar-free, low-glycemic, heart-healthy, high fiber
My European friends crave After Eight® mints and my American friends swear by their thick York or Pearson’s mint patties. I love the combination of mint, coconut and chocolate. My recipe for this heart-healthy candy is made easy by using 5 simple pantry ingredients: shredded coconut and maple syrup for sweetness and fiber, plus a mint tea bag for minty flavor. Then dress them up by dipping each one in a glossy chocolate coating topped with salt. Voila – healthier peppermint patties for any time of day – not just after eight or in the darkness of the movie theater…  


Healthy Peppermint Patties

Ingredients

3 cups shredded coconut
3 tablespoons maple syrup
1 tablespoon mint tea (open a tea bag)
2 teaspoons melted coconut oil
1 to 2 teaspoons peppermint extract
Dipping
1 cup 65-80% dark chocolate chips/chunks
1 tablespoon refined coconut oil
large crystal salt 

Makes 20 patty candies

Instructions

1.  Place shredded coconut in a fast speed blender or a food processor and blend until a paste has formed (about 1 minute).
2.  Add maple syrup, mint tea, coconut oil and peppermint extract and blend again to combine. Taste test to see if you like to add more mint extract.
3.  Form 1-inch (2,5 cm) balls with your hands. Place on baking tray covered with parchment paper and gently press down to flatten into patties. Freeze for 15 minutes to set.
4.  Dipping: Combine chocolate and coconut oil in a microwave safe bowl and microwave for 1 minute at a time. Remove, stir to combine into a glossy, smooth chocolate coating.
5.  Remove patties from freezer. Dip each patty into the chocolate. Sprinkle large crystal salt to stick to the chocolate, return to baking tray.

6.  The patties can be stored in the freezer for up to 3 months. Enjoy at room temperature.
