Paleo Goji Date Bites

Ingredients

1 cup dried dates, rough chopped
1/3 cup seed butter
1/3 cup maple syrup
Add
1/2 cup toasted sunflower seeds
1/2 cup toasted pumpkin seeds
1/4 cup goji berries
1/4 cup raw cocoa nibs
1/4 cup unsweetened vanilla plant-based protein powder
1/4 cup coconut flour
3 tablespoons orange zest
1/2 teaspoon salt

Makes 20 bites

Instructions

1. In a blender combine pitted chopped dates, seed butter and maple syrup. Puree for one minute to blend into a smooth dough. Using a soft spatula, scrape the mixture into a medium sized bowl.
2. Add toasted sunflower and pumpkin seeds, goji berries, cocoa nibs, protein powder, coconut flour, orange zest and salt. Using a wooden spoon stir dough together until the mixture is a sticky but firm ball.
3. Place the bowl in the refrigerator and chill for 30 minutes before forming bites.
4. Pinch off 2 tablespoons of dough and roll into a 1.5 to 2 -inch (4 to 5cm) round balls. Roll each ball in coconut flour to create a non-stick coating. Store in an airtight container. Bites keep for up to 3 days in refrigerator or 3 months in freezer.
