Easy Double Chocolate Brownies

Gluten-free, dairy-free, refined sugar-free, low-glycemic, heart-healthy
Here is a quick and easy recipe for gluten-free brownies that taste delicious and are good for your heart and waistline. I always love walnuts in a chocolate brownie, so this one is packed full of healthy walnuts. Of course, you can substitute any of your favorite nuts if you choose. I used such simple pantry ingredients and no mess techniques to create a quick and satisfying chocolate sweet. If you make these double chocolate brownies with dark chocolate chips that are sweetened with coconut sugar you will have a truly low-glycemic treat that will not spike your blood sugars. Plant-based vegan butter makes these brownies extra gooey and irresistible. Guilt-free treats are waiting!


Easy Double Chocolate Brownies

Ingredients

1 and 1/2 cups coconut sugar
8 tablespoons unsalted vegan butter (at cool room temperature)
1 tablespoon vanilla extract
1/2 teaspoon salt
3 eggs
3/4 cup cocoa powder
1/2 cup gluten free flour mix*
1 teaspoon baking powder
1 cup chocolate chips
1 cup chopped walnuts 

Makes 12 large brownies

*use my gluten free 1-to-1 flour mix recipe or a store-bought 1-to-1 GF baking flour mix.

Instructions

1. Preheat oven to 350ºF/180ºC. Coat one brownie tin liberally with coconut baking spray.
2. Combine sugar, butter, vanilla, and salt in a bowl. Using an electric mixer, mix ingredients on medium speed for 2 minutes until well blended. Add eggs, and blend again for 2 minutes until batter is smooth and creamy.
3. Stir in cocoa, flour, and baking powder. Then fold in chips and walnuts.
4. Pour the batter into the prepared tins to make 12 large brownies.
5. Bake brownies 15 minutes, until the tops are set.
