Who does not love an Ice Cream Sundae with creamy layers of vanilla ice cream, crunchy pecans and sweet banana slices? Make your Banana Sundae even better by adding freshly baked banana cake to the party!  Seriously, this is the perfect dessert. Just cut your cupcakes into bite sized pieces and layer with creamy ice cream and chocolate sauce. Serve these healthy Sundays in a pretty glass for a beautiful dessert that your guests will be asking how you did it - only you will know they are secretly heart-healthy, dairy-, refined sugar- and gluten-free…


Vegan Banana Cake Sundaes

Ingredients

3/4 cup ripe, mashed bananas
3/4 cup coconut sugar
2/3 cup plant-based milk
1/4 cup olive oil
2 teaspoons vanilla extract
1 and 1/4 cups gluten-free flour mix*
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
Layers
vegan vanilla ice cream
sliced banana
toasted pecans
chocolate syrup 

Makes 12 Sundaes

*use my gluten free 1-to-1 flour mix recipe or a store-bought 1-to-1 GF baking flour mix

Instructions

1. Preheat oven to 350ºF/180ºC. Line a 12-count cupcake tin with cupcake papers.
2. Using a hand mixer or whisk, combine mashed banana, sugar, milk, olive oil and vanilla - blend until fluffy.
3. Whisk together flour, baking powder, baking soda and salt. Fold into wet batter just to combine. Do not over mix. Pour batter into 12 cupcakes.
4. Bake 18 minutes until the tops are set. Let cool completely.
5. Layers: Cut cooled cake into cubes, layer cake into the bottom of a clear glass and top with 2 small scoops ice cream, pour in some chocolate syrup and add a few banana slices. Top with another layer of cake and 2 scoops ice cream. Finally, top with toasted pecans and extra chocolate syrup. Do the same with 12 total medium-sized Sundaes. Freeze until ready to serve.
