Occasionally I need a small pick-me-up that satisfies my sweet tooth. A few pieces of chocolate candies usually do the trick. My mom taught me to love walnuts since they grew in our orchard at home.  Walnuts are rich in heart-healthy fats and high in antioxidants. What's even more encouraging is that regularly eating walnuts may improve brain health and reduce your risk of heart disease and cancer. These candies are so delicious and so easy to make with just 4 ingredients.


Walnut Chocolate Clusters

Ingredients

2 cups organic walnuts
1/2 cup dark chocolate chips*
1 and 1/2 teaspoons coconut oil
Large crystal salt

Makes 25 walnut cluster candies

*To stay 100% refined sugar-free I recommend to use chocolate chips that are sweetened with coconut sugar – like Hu Gems or Kakaozon’s 85% chocolate chips

Instructions

1. Toast walnut pieces in the oven at 350ºF/180ºC for 8 minutes until lightly browned. Scatter walnuts onto a small baking sheet covered with parchment paper and arrange tightly pressed together.
Chocolate Coating
2. Combine chocolate chips and coconut oil in a microwave safe bowl and microwave for 60 to 90 seconds. Remove and stir to combine into a glossy, smooth chocolate coating.
3. Pour the melted chocolate over the walnut pieces, coating all of them.  Sprinkle large crystal salt to stick to the chocolate, let it harden in minutes.
4. Place baking sheet in freezer for 10 minutes. Remove from freezer and break apart gently into clusters of walnut candies. Enjoy at a cool room temperature.
