Vegan Golden Protein Bites

Ingredients
1 cup raw cashews
1/2 cup oats
1 tablespoon coconut flour
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon cinnamon
1 pinch of salt
2 tablespoons lemon juice
2 tablespoons lemon zest
2 tablespoons maple syrup
1 tablespoon grated fresh ginger
1 tablespoon chia seeds

Instructions
1. Add into a blender raw cashews, oats, coconut flour, ginger, turmeric, cinnamon and salt. Blend on medium speed for 1minute until the dough resembles a soft flour mixture.
2. In a bowl combine lemon juice, zest, maple syrup, grated ginger and chia seeds. Stir together to combine. Pour your cashew-oat-mixture into the wet ingredients and stir to combine well.
3. Let batter sit in refrigerator until chilled for 20 minutes. Then roll mixture into 2-tablespoon-sized balls with your hands, pressing firmly to shape. It may help to use a little water on your hands to roll the bites. Repeat with remaining mixture.
4. Store in freezer for up to 2 months or refrigerate for up to one week.
