Why we bake with Buckwheat Flour.
Buckwheat is another favorite flour of ours for baking, but unlike its name suggests, Buckwheat isn’t related to wheat at all.
It’s a pseudo-grain and naturally Gluten-Free (GF). Buckwheat flour is made from grinding raw buckwheat kernels into a rich flour. We love the earthy, nutty, slightly bitter flavor. Which reminds us of Rye.
But unlike Rye flour, Buckwheat is Gluten-Free.
Buckwheat flour gives baked goods a rich, dark color and is speckled with black flecks from ground seed hulls. Buckwheat is not a subtle flour, which makes it the perfect ingredient for the bold flavors we love to create. And because it’s bold, Buckwheat stands-up to dark chocolate, strong spices and rich coffee notes.
When stocking your pantry with flours for a “winning team,” buckwheat is a player you don’t keep on the bench. It contains tons of minerals, fiber and essential amino acids and is rich in Manganese, Copper, Magnesium, Iron and Phosphorus. Which makes it the perfect team player for baking nutritious whole foods that fuel your body.
Manganese supports a healthy metabolism while Copper benefits heart health. Magnesium is known to lower risk of chronic conditions like heart disease and type-2 diabetes. Iron helps to fight anemia and is essential to carrying oxygen in your red blood cells.
And lastly, Phosphorus helps in healing tissues (scrapes and scratches and worse).
Buckwheat flour is on the middle to lower end of the Glycemic Index and studies show that it may help moderate blood sugar levels – which makes it especially attractive to people managing Type 2-diabetes.
In addition, Buckwheat may improve blood pressure and blood lipid profiles, giving your heart health an extra leg up.
We use Buckwheat to add robust flavor to cookies and cakes and to add healthy carbs to our work-out and recovery treats.
