No Bake Vegan Walnut Bars

Ingredients

1 and 1/2 cups Madjool dates, pitted
1 cup walnuts + 1/4 cup halves
1/2 cup water
1/4 cup brown rice syrup or maple syrup
1/4 cup melted coconut oil
1 tablespoon vanilla
1 cup shredded coconut
1/2 cup cocoa powder
1/4 cup protein powder
Chocolate
1 cup dark chocolate chips
1 tablespoon coconut oil
large crystal salt
rose petals (optional)

Instructions

1. Combine chopped dates, 1 cup walnuts, water, syrup, coconut oil and vanilla into a food processer or blender. Blend for 1 to 2 minutes into a soft dough.
2. Remove from blender and place dough into a bowl, then stir in remaining 1/4 cup walnut halves, coconut, cocoa and protein powders, stir into a sticky dough.
3. Prepare an 8x8 inches (20x20 cm) square pan with parchment paper to cover the bottom and leave extra paper on sides to grab once bars are ready to cut. Scoop dough into pan and press down firmly into a solid sheet. Freeze for 30 minutes.
4. Chocolate: Combine chocolate and coconut oil in a microwave safe bowl and microwave for 60 to 90 seconds. Remove and stir to combine into a glossy, smooth chocolate coating.
5. Remove bar base from freezer and pour melted chocolate over the entire bar. Sprinkle large crystal salt to stick to the chocolate, let it harden in minutes.
6. Place back in freezer for 10 minutes, remove bar from pan using parchment paper, place on counter and let sit at room temperature for 15 minutes before cutting into 2x2 inches (5x5 cm) square pieces.
