Mocha Power Brownies

Ingredients

1 cup coconut sugar
2 eggs
1 and 1/2 cups almond butter
1 cup strong coffee
1 tablespoon vanilla extract
1/2 cup vanilla protein powder
2 tablespoons 100% cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
1 cup chocolate chips
slivered almonds
large crystal salt

Instructions

1.  Preheat oven to 350ºF/180ºC. Coat a 12-count single-square brownie tin liberally with oil or use a 12-count cupcake tin lined with cupcake papers.
2.  In a large bowl, using a hand mixer, blend coconut sugar and eggs until smooth. Add almond butter, cooled coffee and vanilla. Blend 2 minutes into a creamy, smooth batter.
3.  Add protein powder, cacao powder, baking powder and salt. Stir to combine. Fold in chocolate chips.
4.  Pour batter into prepared tins and top with large crystal salt and slivered almonds. Bake 15 minutes. Let cool completely before handling.
