Crunchy Granola Parfait

High protein, gluten-free, dairy-free, refined sugar-free, vitamin rich
Granola layered with fresh fruit and vegan yogurt makes a perfect, yummy breakfast parfait. My homemade granola is my go-to breakfast. So, I combined my favorite almond-apple-granola with fresh strawberries and mangoes and layered them into a pretty bowl with my favorite vegan vanilla yoghurt. This granola easily rivals any high-end, super expensive granola from a health-food store. And it is homemade! I enjoy giving my granola as gifts to my friends and family.

   


Crunchy Granola Parfait

Ingredients

5 cups rolled oats
1 teaspoon cinnamon
1 teaspoon sea salt
2/3 cup honey
1/3 cup olive oil
1/3 cup coconut oil
1 cup shredded coconut
1 cup sliced almonds
1 cup dried apples
Fresh mango and strawberry
1/2 cup vegan vanilla yogurt

Instructions

1. Heat oven to 300ºF/150ºC. Lightly oil two baking sheets.
2. Place oats, cinnamon and salt in a large bowl and toss to combine.
3. Warm honey in a small saucepan over medium heat. Whisk and simmer for 5 minutes. Remove from heat, add olive oil, coconut oil and vanilla extract, pour into dry ingredients, mix well. Spread the granola out evenly on the prepared baking sheets.
4. Bake 45 minutes, stirring once halfway through. Remove from oven, add coconut, almonds and give the mixture a good stir. Bake 15 minutes more, until granola is lightly toasted and golden. Remove from oven and let cool until granola reaches room temperature. Then stir in the apples.
5. Now make your parfait by layering bite sized fresh fruit with ½ cup fresh granola and vegan yogurt!
