Cocoa Crispy Bites

Ingredients

1/4 cup almond butter
1/4 cup honey*
2 tablespoons coconut oil
2 teaspoons vanilla
½ teaspoon salt
1/3 cup cocoa powder
2 cups brown rice crispies 

Makes 16 energy bites

*For a vegan version, use brown rice syrup or maple syrup

Instructions

1. Heat honey, almond butter and vanilla in the microwave or in a pan over low heat until melted and very warm. Stir ingredients together into a smooth, thick syrup. Add salt and cocoa powder and stir again to make a smooth chocolate syrup.
2. Place 2 cups of organic, unsweetened, brown rice crispy cereal into a large bowl. Pour hot almond chocolate syrup over the rice crispies and stir well to coat all ingredients.
3. Let batter sit in refrigerator until chilled for 20 minutes. Then roll mixture into 2-tablespoon-sized balls with your hands, pressing firmly to shape. It may help to use a little water on your hands to roll the bites. Repeat with remaining mixture.
4. Store in freezer for up to 2 months or refrigerate for up to one week.
