Chocolate Pudding Power Bars

Ingredients

Pudding
1 can full fat coconut milk
1/2 cup coconut sugar
1 tablespoon vanilla
1 and 1/2 cups dark chocolate chips
Dough
1 cup oats
1 cup spelt flour or gluten-free flour mix*
1/2 cup protein powder
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup coconut sugar
1/3 cup coconut oil, melted
1 egg or 3 tablespoons applesauce
1 tablespoon vanilla 

Makes 12 bars

*use my gluten free 1-to-1 flour mix recipe or a store-bought 1-to-1 GF baking flour mix.

Instructions

1. Preheat oven to 350ºF/180ºC. Prepare liberally with baking spray one 12-count single brownie tin.
2. Add coconut milk, coconut sugar and vanilla into a small pan and simmer for 15 minutes until thickened. Remove from heat and add in chocolate chips. Stir into a thick chocolate pudding.
3. Mix in a large bowl: oats, flour mix, protein powder, baking soda and salt. Make a well in the center of the dry ingredients and add coconut sugar, melted coconut oil, egg (or apple sauce) and vanilla. Whisk the batter together until a firm dough forms.
4. Press 3/4 of dough evenly into the bottom of the 12 brownie tins. Keep your hands wet to prevent sticking. Spread the chocolate pudding evenly over the bottom layer. Then crumble the remaining 1/3 dough over bars on top of pudding filling.
5. Bake for 18 minutes until the dough is cooked and pudding is sticky creamy.
